Chocolate + Berry Mousse Bars (Gluten-free!)

First of all – happy Mother’s Day to all the wonderful mommas out there! To my mom, even though we argue a lot, I love you and appreciate everything you do for me 💖 

Okay, so this recipe was originally supposed to be vegan and made with coconut milk BUT my coconut milk seized up when I was trying to whip it into cream and….I decided to improvise. Actually, I think this version turned out better and is packed with protein! Win-win my friends 👌 Also, if you want to try to make a vegan version of this, I would suggest using coconut yogurt (and lemme know how it turns out!) This recipe can be stored in the freezer and makes for a super sweet summer treat!

Chocolate + Berry Mousse Bars (Gluten-Free)



  • 1 1/2 cup Bob’s Red Mill 1-to-1 gluten free flour (or flour of choice)
  • 1/4 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup melted coconut oil
  • 1/4 cup pure maple syrup 

Mousse Filling:

  • 1 1/2 cup plain Greek yogurt (I used Fage Total 0%)
  • 1 Tbsp cocoa powder
  • 1-2 Tbsp pure maple syrup 
  • 1/4 tsp vanilla
  • Your choice of fresh berries to sprinkle on top! (I like blueberries and raspberries)


  1. Preheat oven to 350 F and line a 9×9 inch baking pan with parchment paper
  2. Mix together all the crust ingredients until a stiff dough forms, then press it evenly into the bottom of your lined 9×9 pan
  3. Poke a few holes with a fork on the top of your evenly flattened dough (to prevent air bubbles) and cook for 17-20 minutes 
  4. While that cools, mix together all of the ingredients for the mousse filling. Make sure the crust is completely cool before spreading your filling evenly on top and sprinkling your berries 
  5. Let set in freezer for 2 hours, then cut into squares and enjoy! If you store in the freezer for longer, make sure you let it thaw for 15-20 minutes before cutting and serving
